This pasta is cut using bronze dies (some are over 100 years old!). This creates the dusting and roughness desired in artisanal pastas. The roughness supplies the pasta with the exact amount of absorbency required, ensuring it pairs well with any sauce. Zaccagni is so proud of their Abruzzo roots that they have packaged their pastas with a “window” in the shape of Abruzzo.
